Chocolate Peanut Butter Pudding Pie

Hello Puddin'! 

Remember the old Reese's Peanut Butter Cup commercials? "You've dropped your chocolate in my peanut butter! You've dropped your peanut butter in my chocolate!"  Guess what folks?  We've dropped YOUR peanut butter in OUR chocolate!  

We were working away in our test kitchen a couple of weeks ago talking about how amazing our pudding would be with peanut butter.  Maria made a passing comment that she had made it into a pie before and it was to die for.  We happened to have some chunky peanut butter in our fridge so we decided to go for it.  We cooked our South & Spoon Chocolate pudding and after the final boil, while still hot, we gently folded in the peanut butter until it was fully incorporated. 

We then added the pudding into a pre-baked pie shell.  We used a graham crust on our first try which was delicious.  The graham cracker crust really balanced the pudding perfectly. 

On our final bake day we used a regular crust and it was amazing!  To make our dessert, we used chunky peanut butter (Creamy peanut butter works too - your choice), and Holy Moses, it was rich, decadent and positively luscious.  We also put our heads together to come up with the pie topping... wait for it... Cool Whip mixed with creamy peanut butter!  There is just enough peanut butter in the whipped topping to compliment the pie filling.  It's sunshine mixed with a little hurricane!!!  We topped it off with a drizzle of chocolate sauce and a broken up PayDay candy bar.   Recipe below.  Enjoy your puddin'!   

Pie filling: 1 box South & Spoon Chocolate Pudding mix *reduce amount of milk used to 2 cups.  Cook as directed.  After pudding boils and while still hot, add 1/2 cup chunky or smooth peanut butter. Stir until incorporated. 

Pie Topping: 2 cups Cool Whip defrosted, 1/4 cups smooth peanut butter. Fold together until blended. Don't worry the Cool Whip will hold up to the peanut butter. 

Add the pie filling into your favorite pre-baked pie crust and allow to cool in the refrigerator for four hours minimum.  Once the pudding filling is cooled, add Cool Whip / Peanut butter topping and refrigerate until you are ready to serve!  Decorate your pie to hearts content!
